BEANBURGERS
225gm aduki beans, soaked overnight if dried
piece kombu (optional)
2 carrots, grated
3-4 sticks celery, finely chopped
1 large onion, finely chopped
1/2tsp oregano
2 eggs, beaten
350gm (approx) wholemeal flour or flaked oats
seasoning
Rinse and cover beans with cold water, kombu and soak for 10 minutes. Then cook until soft. Drain. Mix in vegetables, herbs, eggs and seasoning to taste. Add sufficient flour or oats to give firm consistancy. Shape into 12 patties and roll in flour or oats. Bake on an oiled tray fora bout 1 hour at 350F, 180C, gaas 4. Serve hot with tomato and onion sauce, or cold with salad. Vary with other beans, herbs and grains
